Nice weather outside (about 75 and a nice breeze), compare to other places. Although I am spending most of my time down in the basement (nice and cool there too) working on the latest stealth project. It’s about 90% done, but, as usual, the last 10% is taking 90% of the time. Making good progress, though.
Had a nice 4th holiday. Went over to the oldest daughter’s house, where they smoked some MOINK Balls on their grill, then some marinated chicken breasts with potato salad and fruit salad. Then some fireworks when it got dark.
The MOINK Balls were delicious, as usual. This time, I made them a bit differently. I put the pork rub on the inside of the bacon strips, then wrapped them around the meatballs and put them on the bamboo skewers. Then a light dusting of pork rub on the outside, and off to the smoker (with hickory chips) for a couple of hours. Then glazing with an apricot preserves glaze. Very yummy.
For those of you two regular readers who are puzzling over MOINK Balls, read this post over at the BBQGrail’s site (good BBQ hints there). Very easy to do, even on a gas grill. Try them out next weekend.
The garden is growing. Lots of strawberries (which the grandkids like to pick then eat), and there are pea pods and tomatoes growing. Not sure about the cucumber plant, though.
Back to the stealth project. It’s on schedule for going live this month.
